From Pan to Plate in ten Minutes

For the scallops:
12 large sea scallops
One tablespoon of olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 cup Habanero honey
Thoroughly pat the scallops dry with paper towels. Excess moisture will prevent them from searing correctly.
Drizzle the olive oil in a large cast iron skillet or heavy-bottomed pan over medium-high heat. Season the scallops with salt and pepper on both sides.
Once the oil is hot and shimmering, carefully add the scallops in a single layer. Avoid packing the pan too full, as this will reduce the heat and avoid scorching. Sear the scallops for two to three minutes on each side, without moving, until they are golden brown and cooked through.
Drizzle the habanero honey over the scallops and cook for an additional minute, spooning the glaze over them as they cook.
Serve the scallops hot with the remaining habanero honey glaze spooned over them. Pair them with your favorite sides, such as risotto, roasted vegetables, or mashed potatoes.
